많은 사람들이 건강을 위해 비타민을 챙겨 먹는다. 하지만 비타민의 발견은 그리 긴 역사를 갖고 있지 않다. 그렇다면 비타민을 몰랐던 과거에는 어떻게 건강을 챙겼을까? ‘비타민’의 역사에 대해 알아보자.

비교적 소량으로 신체 기능을 조절하는데 체내에서 생성되지 않거나 생성되더라도 충분하지 않아 외부로부터 섭취가 필요하다. 비타민은 흡수성과 저장 방식에 따라 크게 수용성과 지용성으로 나뉜다. 수용성 비타민은 물 없이도 우리 몸에 쉽게 흡수되지만 오래 저장되지 않으며 신장에 의해 조절된다.

1906년 영국의 생화학자 프레드릭 홉킨스(Frederick Gowland Hopkins)는 음식물이 탄수화물, 단백질, 무기질, 지방, 물 등의 5대 영양소 외에 보조 영양소를 포함하고 있다고 발표했다. 보조 영양소의 이름을 비타민이라 명명한 것은 폴란드의 화학자 카지미르 풍크(Casimir Funk)였다.
