구미푸드페스티벌, 전문 셰프 컨설팅으로 지역 음식 경쟁력 높인다

구미시는 10일 구미대학교 창의관 조리실습실에서 ‘2026 구미푸드페스티벌’ 로컬맛집존 참여업소를 대상으로 메뉴 컨설팅을 진행했다고 밝혔다.

 

이번 프로그램에는 로컬맛집존 참여업소 41곳 가운데 사전 신청한 21개 업소가 참여했다. 각 업소가 축제에서 선보일 메뉴를 직접 조리하면 분야별 전문 셰프들이 음식의 맛과 조리 과정, 외관, 판매가격 등을 살펴보고 개선 방향을 제시하는 방식으로 진행됐다.

 

단순한 음식 품평에 그치지 않고 실제 축제 현장에서 발생할 수 있는 상황까지 고려한 실무형 자문이 이뤄졌다. 특히 구미지역에서 생산되는 농축산물을 메뉴에 효과적으로 활용하는 방법과 업소별 고유한 맛을 살릴 수 있는 조리법 등이 주요 논의 대상이 됐다.

 

축제 기간 많은 방문객이 한꺼번에 몰릴 것을 고려해 대량 조리 과정에서 음식의 맛과 품질을 일정하게 유지하는 방법도 다뤄졌다. 이와 함께 조리시간을 줄이는 방안, 위생관리, 음식 제공 방식 등 현장 운영에 필요한 사항에 대해서도 업소별 맞춤형 의견이 제시됐다.

 

컨설팅에는 한식·중식·양식 분야의 전문 셰프들이 참여했다.

 

한식 분야에서는 대한민국 조리기능장이자 경일대학교 식품학부 교수인 손정희 셰프가 메뉴를 점검했다. 양식 분야는 미국 CIA를 졸업하고 뉴욕 미쉐린 3스타 레스토랑 ‘르 베르나르댕’에서 근무한 경력이 있는 임용빈 신세계 조리팀장이 맡았다.

 

중식 분야에는 미쉐린 3스타 레스토랑 ‘셰프스테이블’ 근무 경험과 요리 서바이벌 프로그램 ‘이연복의 후계자를 찾습니다’ 우승 경력을 가진 임승환 셰프가 참여했다.

 

셰프들은 각 업소가 준비한 음식의 강점과 보완점을 짚고 축제 현장에서 바로 적용할 수 있는 조리 및 운영 방안을 제시했다.

 

구미시는 이번 컨설팅에서 나온 의견을 축제 개최 전까지 실제 판매 메뉴에 반영해 음식의 완성도와 상품성을 높인다는 계획이다. 지역 외식업소가 단순히 축제에 참여하는 것을 넘어 메뉴 경쟁력을 높이는 계기로 삼겠다는 취지다.

 

‘2026 구미푸드페스티벌’은 10월 17일부터 18일까지 구미 송정맛길 일원에서 열린다. 지역 음식점을 소개하는 로컬맛집존을 비롯해 푸드테크 기술을 체험할 수 있는 푸드테크&체험존 등 다양한 프로그램이 마련될 예정이다.

 

김장호 구미시장은 “지역 업소들이 가진 고유한 맛에 전문 셰프들의 경험과 노하우가 더해지는 의미 있는 과정”이라며 “컨설팅 결과를 축제에 충실히 반영해 방문객들이 구미에서만 경험할 수 있는 차별화된 음식을 선보이고, 지역 외식업의 경쟁력도 함께 높여나가겠다”고 말했다.

The process involved each establishment directly cooking the menus they intend to showcase at the festival, while professional chefs from various fields reviewed the taste, cooking process, appearance, and pricing of the food to suggest directions for improvement.

 

The consultation went beyond simple food evaluations and provided practical advice that considered situations that could actually occur at the festival site. In particular, key topics of discussion included methods to effectively utilize locally produced agricultural and livestock products in the menus and cooking techniques that highlight each establishment's unique flavor.

Professional chefs specializing in Korean, Chinese, and Western cuisine participated in the consulting.

 

For the Korean cuisine sector, Chef Son Jeong-hee, a Master Chef of Korea and a professor in the Department of Food Science at Kyungil University, reviewed the menus. The Western cuisine sector was led by Shinsegae Culinary Team Manager Im Yong-bin, who graduated from the Culinary Institute of America (CIA) and has experience working at the Michelin 3-star restaurant 'Le Bernardin' in New York.

 

For the Chinese cuisine sector, Chef Im Seung-hwan participated, who has experience working at the Michelin 3-star restaurant 'Chef's Table' and winning the cooking survival program 'Finding Lee Yeon-bok's Successor'.

 

The chefs identified the strengths and weaknesses of the dishes prepared by each establishment and presented cooking and operational strategies that could be immediately applied at the festival site. Gumi City plans to incorporate the feedback from this consulting session into the actual menus before the festival to enhance the quality and marketability of the food. The aim is to use this as an opportunity for local restaurants to go beyond simply participating in the festival and instead strengthen their menu competitiveness.

 

The ‘2026 Gumi Food Festival’ will be held from October 17 to 18 in the Songjeong Matgil area of ​​Gumi. Various programs are scheduled to take place, including a ‘Local Gourmet Zone’ introducing local restaurants and a ‘Food Tech & Experience Zone’ where visitors can try out food tech technologies.

 

Gumi Mayor Kim Jang-ho stated, “This is a meaningful process where the experience and know-how of professional chefs are added to the unique flavors of local establishments.” He added, “We will faithfully reflect the consulting results in the festival to showcase differentiated cuisine that visitors can only experience in Gumi, while simultaneously boosting the competitiveness of the local food service industry.”
